Thai Glass Noodle Salad (Yum Woon Sen)

Yum Woon Sen or glass noodle salad is a staple dish in most Thai homes. The combination of ingredients and seasonings make this dish simply delicious!

Glass noodles or bean thread noodles are actually made from mung bean starch and in Thailand they are considered to be good for dieting for no other reason than the noodles absorb a lot of water, so you need less to fill a bowl.

Authentic Thai Glass Noodle Salad (Yum Woon Sen)

Glass Noodle Salad Ingredients

  • 80g dried glass noodles

  • 200g pork or chicken mince

  • 100g peeled prawns

  • ½ small red onion, sliced

  • ¼ cup spring onion cut into 3 cm long

  • ¼ cup roughly chopped coriander

Glass Noodle Salad Dressing Ingredients

  • 2 Tbsp fish sauce

  • 2 Tbsp lime juice

  • 1 Tsp white sugar

  • 2-3 Long Thai chillies, finely chopped

How to make Yum Woon Sen Glass Noodle Salad

  1. Soak the glass noodles in room temperature water for 10 minutes. Drain the noodle and cut in half with scissors.

  2. For the dressing, whisk together fish sauce, lime juice and sugar. Add chillies to the dressing and set aside.

  3. Cook the soaked glass noodles in boiling water for 2 minutes or until softened. Remove from the water using a spoon or tongs and place in a large bowl.

  4. Place a sieve into the simmering noodle cooking water. Add the pork or chicken into the sieve and cook, agitating until the meat is cooked through. Drain and add to the noodles.

  5. Repeat this process with prawns.

  6. Add the dressing and herbs and toss until well combined.
